Ingredients

  • 2 oz Calvados — VSOP or Réserve recommended
  • 0.25 oz Rich demerara syrup
  • 2 dashes Chocolate bitters
  • 1.5 dashes Spicy bitters — Adjusted from a '1–2 dashes' suggestion to a specific value

Story

This was the first recipe you suggested when I asked for an alternative to Ancho Reyes Verde. You proposed using my existing spicy bitters to replicate the heat of the liqueur, with Calvados as a base to capture the bright, vegetal, fruity character I was after.

Method

  1. Add the demerara syrup and all bitters to a mixing glass.
  2. Pour in the Calvados and fill the glass with ice.
  3. Stir for 20–30 seconds until well chilled and diluted.
  4. Strain into a rocks glass over a single large ice cube.
  5. Express orange oils over the surface and drop the peel in.

Notes

  • Converted the original “barspoon” of syrup to 0.25 oz for precise cataloging.
  • The “1–2 dashes” of spicy bitters was averaged to 1.5 dashes; check the intensity of your specific bitters and adjust.
