Double Agent
An adventurous hybrid that uses overproof rum for bass notes and Mahia for an aromatic anise-fig finish.
Ingredients
- 1 oz Mahia
- 0.5 oz Overproof Demerara rum — Lemon Hart 151 traditional
- 0.75 oz Pineapple juice
- 0.5 oz Fresh lime juice
- 0.5 oz Orgeat
Story
This drink came out of brainstorming a few extra suggestions after we’d established my inventory of Lemon Hart and Mahia. You proposed the Double Agent to see if we could actually combine the heavy Demerara rum with the lighter Moroccan spirit — a Mai Tai riff that leans into spice and anise rather than orgeat-only sweetness.
Method
- Combine all ingredients in a shaker with ice.
- Shake vigorously to emulsify the orgeat and chill the high-proof rum.
- Strain into a rocks glass filled with fresh ice.
Notes
- Orgeat is the key textural component — without it, the drink reads as too sharp.
- Lime + pineapple + orgeat is the Mai Tai DNA; Mahia replaces the rhum agricole’s grassy quality with anise-fig.
