  • 1.5 oz Cold brew concentrate
  • 0.75 oz Vanilla bean syrup
  • 0.5 oz Oat cream
  • 1 oz Aquafaba
  • 0.25 oz Gum arabic syrup
  • 1 dash Smoked salt solution

Story

This evolved during the request to “add some body” to the mocktails, shifting from lighter tea-and-shrub builds into texture-first drinks using glycerin, gum arabic, and aquafaba. The flip landed as the most structurally aggressive example, designed specifically to demonstrate how viscosity and foam can replace the weight of alcohol.

Method

  1. Dry shake all ingredients hard to build foam.
  2. Shake again with ice to chill and emulsify.
  3. Double strain into a chilled coupe.
  4. Serve immediately while the foam is stable.

Notes

  • Heavy emphasis on texture replacement: foam + gum + cream do the heavy lifting.
  • Flip structure (whole-egg-style emulsification, here using aquafaba) is the key to cocktail-like body without alcohol.
