Ingredients

  • 1.5 oz Old Tom Gin — London Dry gin also works
  • 0.75 oz Amaro Nonino
  • 0.5 oz Sweet vermouth
  • 2 dashes Angostura bitters
  • 1 dash Orange bitters

Story

This cocktail came from the same run of Amaro Nonino and gin exploration, but took a darker turn than the brighter sour-style drinks. The idea evolved by pulling the profile toward a Martinez structure — richer vermouth, layered bitters, and deeper botanical notes — while letting Nonino replace some of the traditional sweetness and spice.

Method

  1. Combine all ingredients in a mixing glass with ice.
  2. Stir until well chilled.
  3. Strain into a chilled coupe.
  4. Garnish with a cherry.

Notes

  • Old Tom gin gives the drink a rounder texture and historically appropriate softness.
