Fig & Honey Sour
A lush, textured sour that highlights the natural sweetness of Mahia with honey and bright lemon.
Ingredients
- 2 oz Mahia
- 0.75 oz Fresh lemon juice
- 0.5 oz Honey syrup — 3:1 honey to hot water
Story
This was developed as a simpler, more direct way to showcase Mahia. I wanted something refreshing but with more mouthfeel than a standard sour. You suggested swapping simple syrup for honey, which bridges the figgy notes of the spirit to the bright lemon acidity.
Method
- Shake all ingredients with ice until very cold.
- Strain into a rocks glass filled with fresh ice.
- Garnish with a lemon wheel.
