Pineapple Kefir Highball
A bright, lightly fermented highball combining pineapple, water kefir, spice syrup, and glycerin for effervescence and body.
Ingredients
- 1.5 oz Clarified pineapple juice
- 1 oz Water kefir
- 0.5 oz Allspice syrup
- 0.25 oz Gum arabic syrup
- 3 drops Vegetable glycerin
- top Sparkling mineral water
Story
This drink comes from the same “add body” phase where fermentation and texture agents were introduced to replace alcohol’s liveliness and mouthfeel. Water kefir brought natural effervescence and biological complexity, supported by gum arabic and glycerin to keep the structure from feeling thin.
Method
- Build all ingredients except sparkling mineral water in a highball glass over ice.
- Stir gently, then top with mineral water.
- Give one light lift-stir and serve immediately.
Notes
- Fermentation provides the lift and complexity that alcohol normally would.
- Gum arabic stabilizes mouthfeel in a carbonated build without weighing the drink down.
