Prompted Pours

Night in Casablanca

An exotic Old Fashioned riff that treats Mahia as a dry, potent base spirit with rich demerara and orange accents.

Ingredients

  • 2 oz Mahia — Can be split 50/50 with bourbon for more weight
  • 1 barspoon Demerara syrup
  • 1 dash Angostura bitters
  • 1 dash Orange bitters

Story

You suggested this drink to showcase Mahia’s capability as a “boozy and stirred” spirit rather than just a citrus mixer. I was looking for more varied recipes for the bottle, and you proposed treating Mahia like a clean tequila or grappa in an Old Fashioned template — but specced up with two bitters and demerara for depth.

Method

  1. Combine ingredients in a mixing glass with plenty of ice.
  2. Stir for ~30 seconds until well chilled.
  3. Strain into a rocks glass over a single large ice cube.
  4. Express orange oils over the glass and garnish with a dried fig.

Notes

  • A specced-up companion to the minimalist Mahia Old Fashioned in the catalog — same template, more depth from demerara + two bitters.
  • The 50/50 bourbon split gives the drink more grain backbone if Mahia alone feels too dry.
