White Negroni Variation
A Mediterranean spin on the White Negroni that swaps gin for Mahia to pair fig and anise with bitter gentian and floral aperitif wine.

- 1 oz Mahia
- 1 oz Lillet Blanc — Cocchi Americano is a suitable swap
- 1 oz Suze
Story
I asked for a Negroni-style drink using Mahia that wasn’t a standard red riff. You proposed this White Negroni variation, where Mahia takes the place of gin. The earthy, bitter gentian notes of Suze and the floral sweetness of Lillet Blanc proved to be an excellent match for the aromatic complexity of the fig spirit.
Method
- Combine all ingredients in a mixing glass with ice.
- Stir until chilled and diluted.
- Strain into a rocks glass over a large ice cube.
- Garnish with a lemon or grapefruit twist.
